Carbon monoxide (CO) is an odorless, tasteless, and colorless gas and can be fatal if present even in extremely low amounts. Commercial businesses, especially restaurants where different types of cooking equipment are used, must closely monitor for gases. CO occurs when material containing carbon, such as coal, natural gas, oil, wood, kerosene, or propane burns incompletely. A gas monitoring system will use at least two commercial-grade dual-sensing CO detectors.

Commercial CO detectors have improved technology for diagnostics and sensing CO for an immediate response when levels hit the predetermined set point. Most state codes mandate lower gas levels to produce an alarm than those used in residential CO detectors.
